Cheesy Baked Salmon Wine Pairings
Pair the dish with: Gaia Estate Thalassitis, or with Collavini Refosco Pucino Colli Orientali del Fruili.
Smart tip: use mild or mature Cheddar according to personal preference.
Ingredients (4 servings)
- 900g salmon fillets;
- 2 cloves garlic, crushed;
- 1 teaspoon dried dill;
- salt and pepper to taste;
- 120g grated Cheddar cheese;
- 6 spring onions, chopped.
Method (preparation: 15 minutes; cooking: 25 minutes)
- preheat oven to 230° C / Gas 8;
- place the salmon on a large piece of aluminium foil and season with garlic, dill, salt and pepper. Seal foil around the salmon. Place on a baking tray;
- bake 20 minutes in the preheated oven. Top with Cheddar cheese and spring onions, and continue baking 5 minutes, or until cheese is melted and fish is easily flaked with a fork.
