Not a heavyweight, it is yet deliciously drinkable, and perfect as an aperitif.\u003c\/p\u003e\n\u003cp\u003eClynelish was built in 1819 by the 1st Duke of Sutherland at a cost of £750. By the end of the century the demand for its whisky was such that no trade orders were accepted. This led to the distillery being purchased by Ainslie \u0026amp; Co., blenders from Leith, who increased capacity.\u003c\/p\u003e\n\u003cp\u003eBy 1930 the distillery was owned by Scottish Malt Distillers. During the 2nd World War production was halted but recommenced in 1945 and continued until 1967. With the installation of electricity a new larger distillery was built next to the old one, with 3 pairs of stills as opposed to one. The new distillery assumed the Clynelish name. This was not the end for the old distillery. It was renamed Brora and production recommenced in 1969 and continued until 1983 when it closed.\u003c\/p\u003e\n\u003cp\u003eClynelish is an anglicised version of the Gaelic for green pasture. And, though it’s a coastal whisky, this is fitting for a Scotch with sweet floral fragrances and verdant flavour notes. The distillery is appropriately hidden in a cove near Port Askaig, overlooking the Sound of Islay, across which the ferry chugs to the nearby island of Jura.\u003c\/p\u003e\n\u003cp\u003eCaol Ila was built in 1846 by Hector Henderson who also owned the old Camlachie distillery in Glasgow. Over the next 80 years the disillery had various owners until it was shut down in 1930. It restarted in 1937 only to shut again at the outbreak of World War 2. These were the only periods Caol Ila was silent; despite the many changes in ownership Caol Ila has been in production almost constantly since 1846. After World War II, things proceeded relatively uneventful at Caol Ila for a few decades before it was rebuilt and extended from two to six stills between 1972 and 1974. The distillery was completely rebuilt in order to meet increased demand from the blenders, only the warehouses (still filled with maturing whisky) were spared. After 1974 Caol Ila started to buy their malted barley from the Port Ellen maltings.\u003c\/p\u003e\n\u003cp\u003eThe Caol Ila distillery became part of the United Distillers conglomerate in 1986. In 1989, the first ‘semi-official’ bottling was released in the ‘Flora \u0026amp; Fauna’ range. This would be the only official bottling in a long time. Although the profile of Caol Ila as a single malt has been enhanced in recent years, the main function of the distillery is still the production of malt whiskies for the Johnnie Walker blends. Pears and apricots, followed by figs and dates.\u003c\/p\u003e\n\u003cp\u003eThen the peat returns and adds goat cheese and wet earth. A touch medicinal, but not overly so.
