Special edition of our own-label sparkling wine to celebrate our 10-Year Anniversary (2009-2019). Exclusively handcrafted for Hay Wines by the Padroggi family in Oltrepo Pavese, Northern Italy. Made 100% from organic old vine Pinot Noir grapes, and aged 36 months on the lees. After disgorgment, the wine is bottled without addition of dosage liqueur (Pas Dosé style), and it contains 0 grams of sugars per litre. This sparkling wine shows a complex and elegant nose dominated by enticing notes of dried fruit, bread crust and toasted almond. Good structure, with a beautiful creamy texture intensified by fine lingering bubbles. Dry finish with remarkable length. Spicy notes of white pepper are combined with rich fruitiness of ripe pear. The perfect celebration wine. This wine is named in honour of the foundation of St Katherine’s Hospital, one of Ledbury’s oldest buildings, in 1231 by bishop Hugh Foliot.
