Special Cuvee is made from a majority of reserve wines fermented either in mature oak casks or small stainless steel tanks depending on the characteristics and fundamental potential of the base wines. A significant part of the reserve wines have been fermented in mature oak barrels before being transferred into magnums, which are then stored under cork in Bollinger’s cellars for as long as 12 to 15 years, with a minimum of 5. Blended some years later with the other base wines, coming from the two latest harvests in proportions which can change from one year to another, they impart the final blend with an inimitable and unrivalled consistency and majesty.

A beautiful floral nose, dancing fruit, charming and balanced, it possesses an excellent racy acidity and is altogether a great success. From 50-year-old vines in Les Aubues, an enclave within better known Enceigneres, this is very attractive with quite a full nose and an excellent finish.

A delicate cherry colour with a hint of copper. The mousse is fine and persistent. On the nose, there are aromas of red fruits (strawberries, raspberries, morello cherries) together with nuances of spice. On the palate, this wine is powerful, vinous and is well balanced with a rich and fresh long lasting finish. Ayala Rose is perfect as an aperitif or with hot appetisers. It will also be superb with salmon or with desserts made out of red fruits or crumbles.
