The Dafní grape variety was saved from extinction by the Lyrarakis family, when it was planted in the “Psarades” family vineyard at 480m. altitude in central Crete in the early '90s.
Its name derives from the laurel (bay leaf) plant, which is called “Dáfni” in Greek, as the wine produced resembles these aromas.

Zesty and fresh frizzante wine (semi-sparkling), made with in-bottle fermentation and aging on the yeast lees (also known as "colfondo method" in Northern Italy). The Coteaux de Giennois is a small wine growing region that can be found just north of both Sancerre and Pouilly Fume. Whilst this area is quite unknown in wine circles it is rapidly catching up with its neighbours. This wine is certainly of a similar quality and style, but currently demands lower prices and therefore offers excellent value for money. Made from 100% Sauvignon Blanc, this wine shows great gooseberry fruit on the nose which leads to a well balanced palate of lime and nettles with refreshing acidity.
