Made from Chardonnay grapes grown on the slopes of the Sézannais. The wine is soft, fresh, with a creamy mousse. Fine nose, with refreshing chalky minerality. The finish is long and rich, with floral and pastry notes. Elegant and well-balanced, thanks to a long aging (5 years) on the lees.
Following the Champagne tradition of the past centuries, the Authentique cuvées have been aged under cork on the yeast lees for many years. This particular breeding favours the micro-oxygenation of the wine and develops the power and finesse of its aromas. This "cork staple" sealing technique requires a lot of manual work, especially during disgorgement.
Zesty and fresh frizzante wine (semi-sparkling), made with in-bottle fermentation and aging on the yeast lees (also known as "colfondo method" in Northern Italy). The wine is light-bodied, bone-dry and, without filtering or clarification, hazy in the glass. Perfect with finger foods, and all types of delicate starters.
Black Mountain Traditional Method Brut is a light straw colour. The nose displays apple, citrus and hazelnuts. On the palate you’ll find crunchy green apple, citrus and a crisp finish.

The nose is very powerful, dominated by aromas of fruits in pastry, stewed apricot, with frank notes of sugared almond. Slight notes of pepper and aniseed. On the palate, the feeling is very ample and long, with remaining pastry feeling, ending on a spicy note.
