The wine is light bodied, bone-dry and, without filtering or clarification, as hazy as a blizzard in a snow globe. Straw yellow with greenish hues, it has the very delicate bubbles typical of Frizzante wines, and flowery and fruity scents accompanied by notes of citrus, yeast and baked bread. The lees at the bottom of the bottle offer the wine softness, mouthfeel and longevity and can be shaken into the Prosecco to give a buttery-spicy flavours.

La Stoppa Ageno is one of the benchmark Italian orange wines which are distinctive skin contact white wines. The grapes are macerated on the skins with native yeasts for thirty days and the wine is matured half in stainless steel and half in French barriques. It is orange/bronze colour with an amazing nose of tea, peaches, pears, sweet apricots and spice. On the palate there’s lovely rich ripe peach fruit and also a tannic structure but it is also juicy with honey and floral notes. This extremely complex wine has a dry finish.

This blend of Nero d’Avola and Frappato is slightly purple/red in the glass showing aromas of wild cherries, plum and mulberry with just a touch of raspberry lift. There are hints of flowers, leather, smoke, spice and herbs with wafts of liquorice, earth and mandarin rind. In the mouth the initial attack of fruit is awash with wild cherry sheathed in tobacco leaf with supporting fruit flavours of dark plum and blackberry. A very pretty wine on the palate with violet-like floral flicks across the leather and spice backdrop with hints of roasted meats, citrus rind and scattered herbs. It’s delicious and lively with a nice, lingering finish set upon a plinth of ripe, fine grained gravelly tannins.

Deep, almost shy on the first nose, it reveals itself as the aromas come into focus: wild berries and candied fruit make way for roasted hazelnuts, baked bread, leather, eucalyptus and pomegranate, then the full robust palate shows plenty of temptingly chewy flesh. Soft yet penetrating its sweetness is backed by a supporting acidity that weaves elegantly amongst the fruit. A great introduction to this grape variety.

Red and purple flowers in the nose, kissed with cinnamon and nutmeg, leading you into a smouldering embrace of red currant, black raspberry, baking spice, sweet basil, white pepper, Tabasco-infused, chocolates and black cherries. There are violets and minerals in there as well and the ensemble is rich, yet elegant with a very long finish.

Golden brown in colour, imparted by ageing in virgin oak casks. Even the wood they use for maturing the spirit is an intrinsic part of producing this beautifully balanced Organic Single Malt Whisky… a world-first when it was launched. With that in mind, enjoy the sumptuous aroma without water. It’s delightfully sweet and malty at first, and after a few inhalations you may detect vanilla, toffee and banana influences coming through. Enjoy the taste without water roll it around your mouth and savour the creamy pepper and sweet fruit flavours, particularly ripe bananas. Add a trickle of water to release the whisky and take in the aroma with water, fresh and malty with darker, delicious hints of coffee and cocoa. You may smell some vanilla notes, and a touch of the fruit bowl coming through once again - this time with citrus fruits, especially lemons. Now for the taste with water the smooth and mellow body has an exotic carnival feel with some gorgeous chilli spice and tropical fruit flavours, balanced with creaminess and a dark chocolate edge: a mouth-watering balance with a smooth and long finish. This whisky is certified Organic from start to finish, meeting rigorous UK Soil Association standards for growing the ingredients, distillation, maturation and bottling. Unique on launch in 2006, it is still very rare today.

On the nose you find right from the start the for the Doctor so typical smokey and spicy notes. Very dense with an almost oily-concentrated texture it presents itself extremely complex with kumquat, red apples, cape gooseberry, honey melon and caramel…………almost a never ending story. With a typical tartness that makes this wine even livelier and guarantees an enormous maturing potential.
