Antinori Cervaro della Sala

Antinori Cervaro della Sala is a brilliant yellow in colour with greenish highlights, it shows a rich, complex, and fresh bouquet of hazelnut butter, vanilla, and white flowers. It is elegant on the palate and extremely savoury, crisp, and vibrant. The delicate toasty sensations of the oak barrels blend harmoniously with the structure of the wine, fully bringing out the notes of both tropical and citrus fruit.

The harvesting of the grapes for Cervaro require particular care and attention to avoid damaging oxidative processes or extraction of undesirable tannins. Picking takes place during the early hours of the morning in order to bring to the cellars grapes which are entirely intact and undamaged in their fruit, unaffected by high daytime temperatures, The care and attention continue in the cellars thanks to their particular layout and structure, conceived and programmed to function entirely by gravity flow and, accordingly, to avoid mechanical influence and effect on the grapes and must. The must, after a four hour maceration on the grape skins at 50° Fahrenheit (10°centigrade), falls directly into decanting tanks to lose its impurities before going into barrel. The fermentation and the subsequent malolactic fermentation take place in oak, and it is precisely the completion of the malolactic fermentation which determines the amount of aging time in barrel of the wine. Five months are normally sufficient, and the wine then goes into stainless steel tanks, where it is blended with the Grechetto which has been fermented on its own. Cervaro della Sala, after bottling, is given an additional twelve months of bottle aging in the historic cellars of the Castello della Sala.  before commercial release

The Castello della Sala towers over a tufaceous promontory of the Umbrian Apennines (at 534 meters, or some 1750 feet, above sea level) just a short distance away from the boundary with Tuscany and approximately 18 kilometers (11 miles) from the historic city of Orvieto. It is a lovely medieval fortress, surrounded by historic, hillside Etruscan villages, halfway between the Paglia river and the peak of Mount Nibbio.

The estate consists of a total surface area of 500 hectares (1250 acres), 140 of which (345 acres) are planted to vineyards located at 200-450 meters (650-1480 feet) above sea level on clayey soils rich in Pliocene-epoch fossils of volcanic and sedimentary origin.

Straw yellow in colour with silvery gold tints. The nose is very complex, with notes of exotic fruits (lychee, mango) and subtle aromas of white pepper. The mouth is full and very long. This is a wine with good freshness from lingering acidity balanced with a touch of residual sugar on the finish.

Domaine des Ballandors Quincy 2020

This is the village adjacent to Sancerre and Pouilly Fume where wines of similar style are made but because of Quincy’s ‘lesser’ name at much reduced cost. This wine is a testament to that; the flavours and aromas achieved in this wine are equivalent to any top flight Sancerre, with ‘grippy’ edgy grapefruit notes and steely crisp fruit. When Anton Beukes, winemaker at the Môreson Winery in South Africa, tasted this wine at supper, he said; ‘This is the wine I would love to make’ - Anton makes some very serious wines, so what an accolade! Winner of Best French White Wine at ‘France under one roof’ London 2005.

Full bodied white with a rich background of savoury notes, a very aromatic peach and mayblossom fruit character, but without any sweetness. No oak and fresh fruit makes this wine a real winner. The Aromo wines have a great charm and appeal and this is no exception.

Peter Lehmann Margaret Semillon 2013

While bottle ageing in the Tanunda cellars, the wine has developed an attractive vibrant green/gold colour. The bouquet shows hints of lemon flower together with some waxy, honeyed development so typical of great, aged Semillon. The grapes were picked early in the season to retain more natural acidity and the palate is dry with a zesty finish.
