Bodega Biniagual Memories Negre

An approachable red with bright aromas of wild red berried fruits combined with a subtle hint of spice. Showing a beautifully balanced structure, soft and smooth with plenty of vibrant fruit and a satisfying finish. Manto Negro (the predominant grape) is a dark skinned variety found exclusively in Majorca – and is brilliant for making easy drinking red wines.

Harvested in small boxes of 10-12 kg, the grapes are selected by hand and fermented in temperature controlled stainless steel tanks which hold between 4600 and 8850 litres. The maceration takes an average of 15 to 17 days, for the malolactic fermentation, we use stainless steel and concrete tanks. 12 months in medium toasted oak barrels, of which 60% are French oak and 40% American, with a maximum of 3 uses.

“Our aim is to produce wines which satisfy even the most demanding of palates. We know that good wines are produced in the vineyards, which is why we take the utmost care of our vines all year round; time and manual labour are key to this. From the pruning season in January, to the harvest in September, each and every one of the 148.000 vines is treated by hand at least seven times, and the harvest is also conducted by hand.

To ensure the grapes remain undamaged and intact, we harvest them by hand and place them in small boxes. They are then taken immediately to the winery, located within our vineyard. There, they are selected once again by hand to make sure only the healthy, intact grapes are used for the wine. Once the grapes have been separated from the stalks they are refrigerated at 8-14 ºC and placed directly inside stainless steel tanks, without pressing. In this way we ensure the grape juice is exposed as little as possible to light and air, a fundamental factor in the process of winemaking.

At our winery, we use cutting edge technology during the whole process of winemaking and storage. Our grapes are fermented cold inside large stainless steel tanks which allow us to control the temperature precisely. The grape juice made using grapes selected specially for our Gran Verán ferments in 500 litre oak barrels instead of inside stainless steel tanks. Our red wines mature inside French Oak barrels during 12-18 months. Once inside bottles, the wine needs another four or six months, at which point it reaches optimum conditions and can be sold or consumed.” – Bodega Biniagual

All goods should be examined upon receipt, and any claim for loss or breakage notified by email or telephone to Hay Wines immediately. In the case of goods delivered by couriers, unless any claim is made within 24 hours, no compensation, refund or other credit will be available. In the case of damaged goods, Hay Wines reserves the right to collect these.
