Chateau Fayau Cadillac
Chateau Fayau Cadillac is a deep purple colour. Firstly this wine reveals flavours of red fruits, wild strawberry and cherry. It is supple and round on the palate with fine tannins.
Château Fayau is a charming house surrounded by vines in the centre of Cadillac. Moreover most of its wines are produced on the hillsides overlooking the town.
Furthermore the wine-making tradition goes back to 1711, and the Médeville family acquired the property in 1826. In addition Château Fayau is the centre of the operation and controls over 100 acres of vines.

Soil : Clay-siliceous.
Grape varieties : 70% cabernet sauvignon, 30% merlot
Average age of the vines : 25 years
Vinification : Firstly the grapes are destemmed before vatting. Then fermentation lasts for 15 to 18 days under temperature control. Finally the wine is matured in vats before bottling.
After filtering, in vats.
Bottling : Estate- bottled two years after harvest.
Suggestion: Food and Wine :
A great match with a chicken and potato stew or a pheasant terrine.
