Cotswolds Peated Cask Single Malt Whisky

The Cotswolds Peated Cask Single Malt Whisky has a creamy peat smoke flavour on the palate. Moreover layered with fruit and tannin rich wood. Notes of honey and vanilla.

The whisky utilises 100% locally grown, floor-malted barley. This is mashed and then fermented for more than 90 hours before a double distillation in their bespoke copper pot stills.

This results in a light and fruity new-make spirit.

Together with creamy peat smoke, the whisky is layered with fruit and tannin rich wood. Notes of honey and vanilla.

Process

After being diluted to 63.5% ABV, they then filled ex-peated quarter casks from Scotland with the new-make spirit and left these to mature.

As a result, this has allowed the rich and fruity spirit to take on a light smoked peat flavour.

The whisky has been fully matured in these casks and bottled at cask strength (59.3% ABV), non-chill filtered and with no added colouring.

Malt: Odyssey, grown on Cotswolds farms and floor-malted at Warminster Maltings.

Yeast: Two complementary varieties – Anchor and Fermentis – to ensure good yields and excellent fruity flavours.

Water: Village water supply – filtered, softened and demineralised before use.

Wood: Ex-peated quarter casks from Scotland.

All goods should be examined upon receipt, and any claim for loss or breakage notified by email or telephone to Hay Wines immediately. In the case of goods delivered by couriers, unless any claim is made within 24 hours, no compensation, refund or other credit will be available. This 15 year old matured in sherry wood, a superb malt which earned 95 points from Jim Murray. A lot of the whisky in this is clearly much older than 15 years, this is a really sherried dram and we love it.

Glenmorangie Original 10 YO 40%

Flaky oakiness with a complex toastiness to the barley suggesting the lightest hint of smoke. Amazingly long, drying from the initial sweetness but with flaked almonds amid the oakier notes. A great single malt: beautifully uncompromising from the first sniff to the last gulp.
