Dandelion Vineyards Legacy of the Barossa 30 YO Pedro Ximenez is deep amber/ochre fading to a rusty orange hue. Extraordinary nose of crème brulée, citurs peel, maple syrup, almonds, figs and raisins. Sweet and rich on the palate with vibrant acidity and flavours of candied fruit, citrus, apricot, dried figs and toffee.

Dandelion Vineyards is a fusion of vineyards and vignerons working with old vineyards and artisan winemaking. Zar Brooks and his winemaker wife Elena have teamed up with vignerons Brad Rey and Carl Lindner to produce a range of wines from their favourite vineyards in key regions in South Australia. Their aim is to nurture the character of the vineyards and express the terroir in the wines. As James Halliday states in his 2011 Australian Wine Companion, "It may be a dauntingly competitive marketplace, but there can be few more promising new ventures than this one".

The vines for this rare XO Pedro Ximenez have an average age of 30 years. Vigneron Carl Lindner`s family have being growing PX and producing the fortified wine there since 1944. Traditionally made using artisanal winemaking practices, this wine is hand blended and bottled without fining or filtration.

Traditionally grown and vinified, the now rare Pedro Ximénez was first fortified by his family in 1944 and now averages 30 years of age. This wine is hand blended and bottled without fining or filtration and is best drunk within a week of opening, and we trust with a glass raised to Carl’s and his family’s foresight.

Pedro Ximenez is a white wine grape best known for its role in the sweet sherries of Jerez, Spain. Largely unsuited to table wine production due to its very low acidity, Pedro Ximenez shines as fortified wine either in the Sherry Blend, or as a fortified single-variety wine known as PX. It is grown throughout Andalucia (particularly in Montilla-Moriles) and to a lesser extent in other southern Spanish regions including Valencia, Extremadura and the Canary Islands.
