Description

Devaux Cuvée D Champagne NV

Devaux Cuvée D Champagne NV is a rich and complex Champagne made with a proportion of reserve wine going back to 1995 and aged on its lees for over 60 months.

he “D Collection” wines are Devaux’s very best. The grapes come from highly select, sustainably farmed parcels across 50 hectares. The majority of the vineyards are situated in the Aube on Kimmeridgian limestone-clay soils.

This continental location, on the slopes of the Côte des Bars, is important; it gives the Pinot Noir richness on the nose and a long finish, while retaining finesse.

The Chardonnay in the blend is grown on the fine chalky soils of the Côte des Blancs, Vitry and Montgueux (“the Meursault of Champagne”) to give liveliness and elegance.

Winemaking

90% of the base wines are fermented in stainless steel, with 10% fermented in 300 litre barrels. This is followed by partial malolactic fermentation.

The blend comprises 40% reserve wines (50% for the magnum), a quarter of which are from two perpetual soleras: a Chardonnay solera and a Cuvée D solera that have been going since 1995 and 2002 respectively. The remaining reserve wines are aged in large oak casks.

Following bottling, the liqueur de tirage is added and the wine has a slow second fermentation in bottle and extended ageing on its lees for over 60 months (the legal minimum is 15 months).

This results in a wine with a finer, more persistent mousse and greater potential for complexity. After disgorgement, the wine receives a light brut dosage of 7g/l.

Producer

Devaux was founded in 1846 by brothers Jules and Auguste Devaux, and was family owned for more than a century.

Today, Devaux is owned by the Union Auboise, a co-operative in the Côte des Bar, the heartland of Pinot Noir in Champagne, where the grapes are in huge demand from the top producers.

Physically closer to Chablis than Reims or Épernay, the vines are grown on Burgundian soils of Kimmeridgian marl and Portlandian limestone.

Pol Roger Brut Quick View

Pol Roger Brut

Pol Roger Brut Reserve is synonymous with classic, brilliant Champagne. The Champagne has its devout disciples within the trade - almost a trade secret! When you get to taste it you will understand why the trade want to keep it for themselves. The small, classic bubbles, perfumed spice, vanilla and coffee leading to a fruit filled bundle of vibrant tastes finishing with elegant spices and a hint of butter. On the nose, white flowers, green apple, brioche and a trace of minerality dominate the champagne. On the palate there are notes of stone fruits, certain nuttiness and a hint of honey supporting the freshness of the acidity. UK stock receives an additional 6 months post-disgorgement ageing so it is ready to drink upon release but cellaring for a few years will reveal greater depths. Bollinger Special Reserve

Special Cuvee is made from a majority of reserve wines fermented either in mature oak casks or small stainless steel tanks depending on the characteristics and fundamental potential of the base wines. A significant part of the reserve wines have been fermented in mature oak barrels before being transferred into magnums, which are then stored under cork in Bollinger’s cellars for as long as 12 to 15 years, with a minimum of 5. Blended some years later with the other base wines, coming from the two latest harvests in proportions which can change from one year to another, they impart the final blend with an inimitable and unrivalled consistency and majesty.
