Domaine Berthet-Bonde Balanoz
Domaine Berthet-Bonde Balanoz is a fresh, pure Chardonnay with the distinct notes of the Jura terroir of earth and hay. The nose shows mildly spiced honey, almonds and pastry notes which follow onto the palate together with citrus fruits and toasty oak notes.
Jean Berthet, comes from a family of craftsman rather than winemakers, but decided very early on that he did not wish to follow this particular path, and so pursued a course in agronomy at Montpellier, where he met wife Chantal.
Jean Berthet-Bondet has been working Domaine Bertet-Bonde since 1984, spanning only 10 hectares with most vines over 30 years old, this estate is steeped in history and heritage.
Today half of Jean’s land is in the Château Calon appelation where the Savagnin grape is grown solely to make the world famous Vin Jaune. Exclusive to the Jura, it is harvested late and aged in barrel for over 6 years. In that time a “voile” or layer of yeast forms on top of the wine, which gives the wine its distinctive flavours including walnuts, hazelnuts and green almonds. Jean is a master of his craft and his wines show the wondrous individuality of this classic region.
The domain has an area of 10 hectares (24 acres) under cultivation, of which 5 hectares come under the appellation of Château-Chalon and 5 hectares under the appellation of Cotes du Jura. These vines often need a lot of care and attention. Mechanisation is difficult and so that means that the majority of the work has to be done by hand, and therefore requires a lot of people, but that is a small price to pay for the resulting wines.
He uses indigenous yeasts and as a precaution he prepares a “pied de cuve” to start the fermentations of the various cuves. This is made from a small quantity of grapes that ferments spontaneously. He verifies with the lab that these are the right yeasts before incorporating them into the cuves.

In the case of goods delivered by couriers, unless any claim is made within 24 hours, no compensation, refund or other credit will be available. In the case of damaged goods, Hay Wines reserves the right to collect these.
