Domaine Jean Defaix Chablis

Domaine Jean Defaix Chablis is a very stylish Chablis that has steely elegant flavours of apple and citrus

“Domaine Jean Defaix Chablis premier cru is rich with mineral, apple and melon flavours and the waxy texture combined with balanced acidity which shows us how good Chablis can be”.

Daniel Dampt is one of Burgundy’s most celebrated producers, and he produces wines under both his own names and that of Jean Defaix, his father-in-law. Jean Defaix Chablis

The domaine covers 30ha of vines (16 of AOC Chablis and 14ha of 1er Cru, split across five vineyards. The house style produces clean, ultra-pure, wines like Domaine Jean Defaix Chablis with the bright steely acidity and not so much as a hint of oak.

Working with his two sons, Vincent and Sebastien, who have worked in New Zealand and Australia, the family produce clean, ultra-pure whites with bright steely acidity and not so much as a hint of oak.

They craft wines that are true to the history of the region and reflect the rich heritage of the Defaix name and as represented by Domaine Jean Defaix Chablis .

It is important for the group’s wines to be well classified in the various wine guides and competitions, in order to compare them with other wine growers.

Domaine des Ballandors Quincy 2019

This is the village adjacent to Sancerre and Pouilly Fume where wines of similar style are made but because of Quincy’s ‘lesser’ name at much reduced cost. This wine is a testament to that; the flavours and aromas achieved in this wine are equivalent to any top flight Sancerre, with ‘grippy’ edgy grapefruit notes and steely crisp fruit. When Anton Beukes, winemaker at the Môreson Winery in South Africa, tasted this wine at supper, he said; ‘This is the wine I would love to make’ - Anton makes some very serious wines, so what an accolade! Winner of Best French White Wine at ‘France under one roof’ London 2005.

Loimer Riesling 2019

A rather restrained nose of fresh apricot and white stone fruit develops into youthful lime perfumes. On the palate, the Loimer Riesling has a crunchy acidity and lots of texture. Light-bodied, the wine is balanced and has a medium to long finish.

Peter Lehmann Margaret Semillon 2012

While bottle ageing in the Tanunda cellars, the wine has developed an attractive vibrant green/gold colour. The bouquet shows hints of lemon flower together with some waxy, honeyed development so typical of great, aged Semillon. The grapes were picked early in the season to retain more natural acidity and the palate is dry with a zesty finish.
