Domaine Pillot Saint-Aubin Sentier du Clou 1er Cru

Domaine Pillot Saint-Aubin Sentier du Clou 1er Cru expresses a beautiful aromatic persistence of white flowers, green apple and citrus with a mineral touch connected to the limestone of the ground.

Furthermore this wine will  appreciate with two or three years of age, when it develops a nose of citrus peel, white fruits.

Winemaking

The grapes are hand-picked. Pressed, the juice is then fermented in French oak barrels (50% new). The wine is barrel aged until the following summer. In this way, the wine has time to integrate and confirm its personality. Bottled at the winery after aging for 11-12 months.

Producer

The origins Pillot go back to the XVIIth Century in Chassagne, our ancestors used to work in the vineyard, to make wine and especially to produce barrels. In the XIXth century the Pillot family have abandoned the barrel making and have shifted to vines while enlarging the property on the hillside of Chassagne-Montrachet.

“Fernand and his son Laurent, the 4th generation, again spread the domain in 1992, then in 2001 with the resumption of vineyards Pothier-Rieusset in Pommard. Today, we run 14,8 ha for a total of 22 appellations. Our vineyards are concentrated on Chassagne-Montrachet and Pommard terroirs mainly, but also on the soils of Santeany, Saint-Aubin, Puligny-Montrachet, Meursault, Volnay and Beaune. Hand selected bunches of fruit are vinified and matured in a simple yet carefully built modern winery keeping where appropriate with traditional burgundy practices.

Our vineyards are worked “agrobiologie” with big care and soils are cultivated without uses of chemical weed-killers there. We are members of the research group Dephy-ECO-phyto since 2012. ” – News > Domaine Fernand et Laurent Pillot / Chassagne-Montrachet (vinpillot.co.uk)

In the case of goods delivered by couriers, unless any claim is made within 24 hours, no compensation, refund or other credit will be available. Peter Lehmann Margaret Semillon 2012

While bottle ageing in the Tanunda cellars, the wine has developed an attractive vibrant green/gold colour. The bouquet shows hints of lemon flower together with some waxy, honeyed development so typical of great, aged Semillon. The grapes were picked early in the season to retain more natural acidity and the palate is dry with a zesty finish.
