El Dorado 15YO Rum

El Dorado 15YO Rum has a full nose packed with dark coffee, candied orange, almonds, dark chocolate, pepper and rich vanilla. Beautifully rounded palate with a great spread of flavours: grilled tropical fruit with smooth oaky spice – silky, vibrant and moderately full-bodied.

This rum has been laid down in oak barrels for at least 15 years then artfully blended using the Enmore and Diamond Coffey Stills, the Port Mourant Double Wooden Pot Still and the Versailles Single Wooden Pot Still – for you to savour and enjoy.

The Stills

Demerara Distillers Limited is in a unique position in the world of rum, continuing to operate the original production stills used on three of the great Sugar Estates of the 18th and 19th centuries. With its various stills, no other rum distillery in the world offers such a variety and range of different styles of rum.

Maturation

The signature rums from each of our heritage stills are aged in oak barrels in custom-built warehouses. First being reduced to their required strengths, our rums are then drawn from the huge stainless stains tanks and laid down for as much as thirty years in 45 gallon oak casks (once-used whisky barrels). It is through this process that the rum acquires, through contact with the oak, its golden to deep brown colour and rich mellow character.

Ageing at ambient temperature under tropical climatic conditions contributes crucially to the mellow smoothness of the final spirit, with its complex flavours and rich aromas that make Demerara Rums so unique.

The flavours of oak wood from the barrels and the complexities of the interaction between wood and spirit are greatly enhanced by the tropical climate of Guyana.

The ageing process is significantly speeded up by the high humidity and steady temperature – resulting in a Demerara 8 Year Old Rum, for instance, having a maturity equal to that of a 16 year old spirit aged in more temperate climates.

Moniack Mead

Rating:
Moniack Mead is a traditional honey mead which is produced at Moniack Castle by Highland Wineries, and is said to be one of the best meads being made in modern times. Mead is one of the oldest alcoholic drinks known in history and, like all meads, Moniack Mead is produced through the process of fermenting honey. An interesting fact about mead is that it is traditionally drunk for the month after a wedding which is where the word “honeymoon” came from. Moniack Mead has a lovely, lingering and smooth flavour with elements of caramel and fermented honey. Our recommendation is that this mead is best served either chilled or if you prefer as a aperitif. 75cl bottle

The nose is lemon, lime, juniper, and very classic in character. Just a tinge of sweetness with a touch of creamy lemon as well. Juniper on the tip of the tongue, followed by lemon, coriander and angelica. Just a bit of spice, with citrus blossoming in the middle. The finish hints at anise, angelica, juniper and citrus rind. Tart and direct, with a very dry palate cleansing finish.
