The individual pickings of Viognier were pressed and fermented at their Riverview winery, in order to make the Falconhead Hawkes Bay Viognier.

Approximately 35% went to barrel for fermentation and maturation. After 12 months in barrel and tank the wine was blended, with bottling in August 2014.
