Fog Mountain Cabernet Sauvignon

Fog Mountain Cabernet Sauvignon is a deep garnet in the glass and opens with alluring aromas of dark red fruit. This luscious Cabernet Sauvignon presents rich flavors of dried plums, Medjool dates, red currants and bright berries flavours on the palate. The wine has soft, round tannins and a lingering finish.

The grapes for Fog Mountain’s Cabernet Sauvignon are sourced exclusively from sustainably-farmed vineyards throughout California, including fruit from Lodi and Paso Robles. A small proportion of Petit Verdot and Petite Sirah is also incorporated into the blend. The mountain slopes offer unique soils and a climate ideally-suited for responsible sustainable agriculture. The fog cools the vineyards, preserving fresh acidity in the grapes and lengthening the ripening period for the development of complex aromatics.

Heavy spring rains enriched the soils and delayed bud break by a few weeks. A heat spike in June, followed by warm weather, brought even veraison throughout the vineyards. A cooling trend and touch of rain in mid-September created ideal conditions for the 2019 harvest, which is considered a near-perfect vintage.

After fermentation, the wine underwent 100% malolactic fermentation. The final blend was aged, partially in oak, for six months prior to bottling.

Fog Mountain Cabernet Sauvignon forms part of the Boisset Collection. The name pays homage to the Californian mountain ranges and the cooling fog, which have a huge influence in Californian viticulture. The mountains offer unique climate conditions and varied soils on which to plant vines, whilst the fog, with its cooling effect, creates the ideal microclimate, prolonging the growing season and allowing the grapes to fully ripen.
