Hill Billy Gin

Over the last couple of years Glyn and Lloyd have been working on the recipe for Hill Billy Gin.

The journey to date has included lots of research, development and tasting with input from many talented local food and drink heroines and hero’s. One of the key areas they have been working on is the maceration process, where the organic alcohol reacts with the chosen botanicals to create a unique smooth yet floral gin.

Being located in rural Herefordshire, the apple plays a key part in giving a fruity soft undertone that reflects the Golden Valley and all the beautiful surrounding orchards.

They start with a premium organic alcohol, 12 Botanicals and apple juice from the Gwatkin Cider company and with a perfected combination of maceration and vapour infusion we have produced an award winning London Dry Gin.

Botanical List

  • Juniper with a punch
  • Coriander for its floral aroma
  • Hill Cardamom for its smokiness
  • Angelica for its woody musky notes and a hint of Eucalyptus
  • Orange and Lemon peel for a nose of citrus
  • Very well behaved Liquorice (You need to ask)
  • Fresh garden herbs which include Rose, Bay, Heather and Bay
  • We cut our Gin to 43% using mineral rich water from the Brecon Beacons National Park which gives a raw pearlescent finish.

Moniack Mead

Rating:
Moniack Mead is a traditional honey mead which is produced at Moniack Castle by Highland Wineries, and is said to be one of the best meads being made in modern times. Mead is one of the oldest alcoholic drinks known in history and, like all meads, Moniack Mead is produced through the process of fermenting honey. An interesting fact about mead is that it is traditionally drunk for the month after a wedding which is where the word “honeymoon” came from. Moniack Mead has a lovely, lingering and smooth flavour with elements of caramel and fermented honey. Our recommendation is that this mead is best served either chilled or if you prefer as a aperitif. 75cl bottle

The unique recipe makes for an ideal combination with cordials (like pomegranate, mint, orgeat or grapefruit) or fruit juices (mango, strawberry, cranberry). 70cl bottle

Williams Chase Herefordshire Elegant Crisp Gin 48%

This gin is complicated. The taste is the true taste of junipers highlighted by the citrus and the sweetness of the apples, elderflowers and hops. It has a beautiful and textured mouth feel due to the luscious organic apples and the naturally pure water taken straight from the aquifer that runs underneath their orchards. Try it with a slice of apple rather than lemon.
