Shaw and Smith M3 Chardonnay

Shaw and Smith M3 Chardonnay has a beautifully complex nose showing lemon, apple and white peach along with biscuit notes. The palate displays trademark M3 elegance and restraint with an extra dimension of creaminess through the finish. A wine of depth and concentration that balances generous fruit flavours with savoury characters and crisp acidity

Established in 1989 by Martin Shaw and Michael Hill Smith, Shaw + Smith’s…

aim is to make contemporary, high quality wines that stand amongst the best of their type in Australia. The wines are made exclusively from fruit grown in the Adelaide Hills, one of Australia’s coolest and most exciting regions. Shaw + Smith specialise in grape varieties suited to the cooler climate, such as Sauvignon Blanc and Chardonnay and also make fantastic wines from Shiraz and Pinot Noir. Their wines consistently win medals and trophies at international wine competitions.

Fruit was sourced principally from the Shaw & Smith vineyard at Lenswood. Low yields were achieved by aggressive pruning and pre-harvest bunch thinning. All fruit was hand-picked to avoid fruit damage.

In 2012 Shaw + Smith bought this established 20 hectare (50 acre) vineyard located on Kumnick HIll Road in Lenswood. The soil is fertile brown loams over clay, as well as thinner topsoil areas on the ridges with broken shale and stone. The property is undulating with some very steep areas that provide east and west facing orientation and aspect. The vineyard was planted in 1999, to Chardonnay and Pinot Noir primarily, and some Sauvignon Blanc. Not only are the vines mature, they are also a very good mix of clones. The property stands at 455 – 500 meters above sea level, the highest Shaw + Smith vineyard.

Whole bunches were chilled overnight prior to pressing. The juice was then barrel fermented in new, one and two-year-old French oak barriques. Wild yeast fermentation and partial malolactic fermentation were used to add complexity and mouth-feel to the wine. After fermentation, the wine spent nine months in barrique, with some lees stirring to build complexity. Special care is taken not to over oak the wine, in order to maintain fruit purity.

Jean-Claude Bachelet Puligny Montrachet Les Aubues 2017

This is really classy in 2010, the first year with the name of the lieu-dit on the label. A beautiful floral nose, dancing fruit, charming and balanced, it possesses an excellent racy acidity and is altogether a great success. From 50-year-old vines in Les Aubues, an enclave within better known Enceigneres, this is very attractive with quite a full nose and an excellent finish.

Domaine des Brosses Sancerre 2019

The Girard family have 6 different parcels of Sancerre vineyards. Their hillside vineyards are located on classic clay and chalk soils, giving the grippy, mineral style expected of true Sancerre. Domaine des Brosses has used a machine harvester to collect the grapes since 1989. This is so that the Sauvignon Blanc is brought to the winery in the coolness of night-time, thus retaining the classic citrus and gooseberry aromas and flavours of Sancerre. Pale yellow in colour. The nose is fresh and full of hay, citrus and mineral notes. The palate is medium in body with crisp lemon acidity and an appealing creamy complexity alongside the ripe peach, elderflower and mineral flavours which last well on the long finish.
