Il Cancelliere Gioviano
Il Cancelliere Gioviano is a juicy Aglianico.
Aged in steel for 6 months on the lees, then in wood (oak and chestnut) for 18 months.
Then this wine spends at least other 12 months in the bottle.
The Gioviano has a rough minerality and notes of leathers, dark fruit and berries.
The finish is warm, with hints of browns, mocha, lingering on the palate.
The Philosophy
Natural wines are not chemically manipulated to produce a standardised output, which must be preserved at all costs.
Therefore, they reflect their vineyard origins better. Therefore, they can also vary significantly from one vintage to the next. They feel the influence the climate and of the general environmental context.
Certainly, the objective is precisely to obtain the best possible output under varying circumstances, always trying to deliver a wine that reflects the distinctive character of the territory.
Moreover, having very little or no added SO2, natural wines usually evolve in the bottle, especially in the first months or years.
This is a general characteristic of completely natural wines.
Il Cancelliere Gioviano - The Producer
Certainly, Il Cancelliere is a family affair.
Located in the heart of Montemarano, the small 5 hectares of vineyards are run by Claudio Panetta and his wife, whose family owns the property.
Most importantly, Claudio’s father-in-law, Soccorso ‘Il Cancelliere’ Romano tends to the vineyards and his sister-in-law helps manage orders and the cellar.
Furthermore, on the land they only grow Aglianico and use old oak, in the cellar, to intensify the perfumes and aromas of the grapes.
