Sulphites are among the most discussed, misunderstood and occasionally blamed substances found in wine. They are often associated with headaches, heavily processed bottles and industrial winemaking, while wines made with fewer sulphites are sometimes presented as automatically more natural or healthier.
The reality is considerably more nuanced. As is often the case with wine, the truth is less dramatic than the headline and rather more interesting!
Sulphites occur naturally in virtually every wine because small quantities are produced during fermentation. Winemakers may also add sulphur dioxide, commonly referred to as SO₂, to protect a wine from oxidation, unwanted microorganisms and premature spoilage.
A low sulphite wine is therefore not necessarily a wine containing no sulphites at all. It is usually a wine whose total sulphur dioxide level is significantly below the amount permitted for a comparable conventional or organic wine.
So, what exactly are sulphites, why do winemakers use them, and why are more wine drinkers choosing bottles made with less?
What Are Sulphites in Wine?
Sulphites are sulphur-based compounds that may be produced naturally during alcoholic fermentation or deliberately added by the winemaker during production.
When discussing wine, the terms sulphites, sulphur dioxide and SO₂ are often used interchangeably, although the chemistry involved is slightly more complex.
Sulphur dioxide is primarily used for two important reasons:
- it helps protect wine against oxidation, preserving freshness, colour and aroma;
- it helps control unwanted yeasts and bacteria that could cause spoilage or unstable fermentation.
The International Organisation of Vine and Wine recognises sulphur dioxide as an important tool for limiting oxidation and controlling microbial activity during winemaking.
Used carefully, sulphur is not simply just an additive. It is one of the most effective ways of protecting a wine as it develops, travels and ages.
Does All Wine Contain Sulphites?
Almost every wine contains at least a small quantity of sulphites, including many bottles labelled as having no added sulphites.
This is because yeasts naturally produce small amounts of sulphur compounds during fermentation. A winemaker can choose not to add sulphur dioxide, but cannot always guarantee that the finished wine will contain absolutely none.
This is why the expression sulphite-free wine can be misleading. In most cases, no added sulphites is the more accurate description.
In the UK, sulphites must be declared on the label when a wine contains more than 10 milligrams per litre. This explains why even extremely low sulphite wines may still carry the familiar statement “contains sulphites”. In other words, “contains sulphites” is not a warning that someone has emptied the chemistry cupboard into your bottle!
In fact, the declaration only means that the wine exceeds the allergen-labelling threshold. It does not mean that the bottle contains an unusually high level.

What Is a Low Sulphite Wine?
There is no single legally defined threshold that allows a wine to be universally described as low sulphite.
The term is generally used for wines whose total sulphur dioxide level is substantially below the maximum permitted for their colour, sweetness and production category.
Total sulphur dioxide includes:
- free SO₂, which remains active and available to protect the wine;
- bound SO₂, which has already reacted with other compounds in the wine.
Two wines with the same total sulphite level may therefore behave differently. Their stability will also depend on factors such as acidity, residual sugar, oxygen exposure, temperature, alcohol and microbiological condition.
Low sulphite does not mean no sulphites. No added sulphites does not necessarily mean zero sulphites.
How Hay Wines Defines a Low Sulphite Wine
Because there is no universal legal definition, at Hay Wines, we have always applied a clear and consistent rule when deciding which wines should appear in the low sulphite wine collection at Hay Wines.
For us to classify a bottle as low sulphite, its total SO₂ level must be lower than the maximum currently permitted by the Soil Association for an organic wine in the same category.
This does not necessarily mean that every wine in our low sulphite collection is certified organic. It means that its verified or producer-declared total sulphite level falls below the relevant organic-wine benchmark for a wine of the same colour, sweetness and style.
Under the Soil Association’s current Organic Standards for Great Britain, the maximum total sulphur dioxide levels are:

These are maximum permitted figures rather than typical levels or targets. A producer may work well below them, particularly when using exceptionally healthy fruit and precise protective handling in the cellar.
Our own classification is deliberately simple: the wine must sit below the relevant Soil Association organic limit. Many of the bottles we select sit dramatically below it.
Low Sulphite vs No Added Sulphites: What Is the Difference?
The two descriptions are connected, but they are not interchangeable.
No Added Sulphites Wine
A no added sulphites wine is made without deliberate SO₂ additions during fermentation, ageing or bottling.
Any sulphites present in the finished wine have been naturally generated during fermentation. These wines require extremely healthy grapes, excellent winery hygiene and meticulous management of oxygen and temperature.
Domaine Klur Cuvée Meow Crémant d’Alsace Sans Soufre is a useful example. This traditional-method sparkling wine from Alsace is made without added sulphur during vinification, ageing or disgorgement.
Its total sulphite level is expected to remain below 10 mg/L, with any detectable sulphites being generated naturally by yeast during fermentation.
Low Sulphite Wine
A low sulphite wine may receive a small and carefully measured dose of SO₂, often immediately before bottling.
This can help the wine retain its freshness and stability during transport and storage without requiring the more defensive levels sometimes used in conventional production.
For many winemakers, this represents a sensible middle ground. The producer uses as little sulphur as possible while ensuring that the bottle reaches the customer in the condition intended.
Why Do Winemakers Reduce Sulphites?
There is no single reason why a producer may choose to work with less sulphur. For many independent winemakers, the decision forms part of a broader philosophy based on careful farming and minimal intervention.
To Preserve Fruit and Regional Character
Winemakers who reduce additions often want the finished wine to express its grape variety, vineyard and vintage as clearly as possible.
Higher sulphur additions can temporarily mute aromas and make a young wine feel closed. Lower additions may allow fruit, flowers, herbs and texture to appear more immediate, provided the wine remains healthy and stable.
To Intervene Less in the Cellar
Low sulphite production is often associated with a wider low-intervention approach. This may also involve organic or biodynamic viticulture, spontaneous fermentation, limited filtration and fewer corrective additions.
However, these terms should not automatically be bundled together.
A wine can be organic but relatively conventional in the cellar. It can be natural without carrying organic certification. It can also be extremely low in sulphites while remaining clear, polished and stylistically classic.

More wine drinkers now want to understand not only where a wine comes from, but also how it was farmed, fermented, stabilised and bottled.
Interest in low sulphite wine, organic wine, natural wine and low-intervention wine is part of this broader desire for transparency.

How Are Low Sulphite Wines Made?
Reducing sulphur does not simply involve leaving an ingredient out. It often requires more work, greater precision and closer attention throughout the production process.
Healthy Grapes Are Essential
Damaged, mouldy or underripe grapes carry a greater risk of undesirable microorganisms and unstable fermentation.
A producer wishing to minimise sulphur therefore needs clean, healthy fruit, often harvested by hand and carefully sorted before fermentation.
This creates a direct connection between vineyard quality and low-sulphite winemaking. The healthier the grapes, the easier it is to reduce protective additions safely.
Winery Hygiene Becomes Even More Important
Tanks, barrels, presses, hoses and bottling equipment must be kept meticulously clean.
When a winemaker cannot rely on a larger sulphur addition to control unwanted microorganisms, prevention becomes particularly important.
Oxygen Must Be Carefully Managed
Oxygen can rapidly diminish the freshness of an unprotected wine. Producers may use inert gases, full tanks, careful transfers, temperature control and precise bottling procedures to limit exposure.
Some winemakers accept a small degree of oxidative development as part of the intended style. Others aim for an exceptionally clean and fruit-driven result.
Low sulphite wine is a production choice, not a single flavour profile.
A Small Dose May Be Added Before Bottling
Many producers avoid adding sulphur during fermentation and maturation, then use a minimal dose immediately before bottling.
This final addition can improve stability during transport and storage while keeping the overall total far below the relevant organic limit.
Do Low Sulphite Wines Taste Different?
Sometimes, but not always.
A wine made with less sulphur may feel particularly open, aromatic or expressive when first poured. Some examples have a vivid, juicy and energetic quality.
Other low sulphite wines taste entirely classic. They may be clear, polished and stable, making them almost impossible to identify as low sulphite without seeing the technical analysis.
The category can include:
- clean and mineral white wines;
- traditional-method sparkling wines;
- fresh and floral red wines;
- structured and mature reds;
- skin-contact and orange wines;
- cloudy or lightly sparkling natural wines.
There is no single “low sulphite taste”. So, if you were expecting every low sulphite wine to be cloudy, fizzy and vaguely reminiscent of a farmyard... you may be pleasantly surprised!
Are Low Sulphite Wines the Same as Natural Wines?
No. There is considerable overlap, but the terms describe different aspects of production.
Natural wine usually refers to a broad philosophy involving responsibly farmed grapes and minimal intervention in the cellar. There is no single universally enforced definition covering every bottle marketed as natural wine.
Low sulphite wine refers more specifically to the total amount of sulphur dioxide present in the finished bottle.
A natural winemaker may add no sulphur, use a tiny amount at bottling or occasionally use a little more when the vintage requires additional protection.
Equally, a polished and technically precise wine may be very low in sulphites without being marketed as natural wine.
Arianna Occhipinti SP68 Rosso is both a natural, biodynamically farmed wine and a very low sulphite wine. Other bottles in our collection fit the low sulphite category while offering a more familiar and conventional-looking style, like the Menicucci Ginesia Montepulciano d'Abruzzo.
Are Organic Wines Always Low in Sulphites?
Organic wines are subject to lower permitted sulphur dioxide limits than many conventional wines, but they are not automatically no-added-sulphites wines.
Organic certification mainly controls how grapes are cultivated and which materials and processes may be used during production. Sulphur dioxide remains permitted because of its role in protecting wine from oxidation and microbial spoilage.
A certified organic producer may therefore make a wine close to the permitted maximum. Another producer without organic certification may make a wine with exceptionally low total SO₂.
Certification and sulphite analysis answer different questions.
La Piotta Old Vine Pinot Grigio, for example, is an organic Italian white made with carefully controlled sulphur additions. Its total level is typically around 40 to 60 mg/L, substantially below the Soil Association limit for a dry organic white wine.
Do Sulphites in Wine Cause Headaches?
Sulphites are frequently blamed for wine headaches, particularly after drinking red wine. However, a headache after wine is not reliable evidence of sulphite sensitivity.
Alcohol, dehydration, quantity consumed, drinking speed, sleep, food intake and other naturally occurring compounds can all contribute.
In fact, sometimes the most likely culprit is not the sulphur dioxide... it is the second/third/... bottle!
Red wines also frequently contain less sulphur dioxide than white or sweet wines, despite being more commonly blamed for headaches.
Genuine sulphite sensitivity does exist and is particularly relevant to some people with asthma. It is not the same as an ordinary hangover or a general reaction to alcohol.

Anyone experiencing wheezing, breathing difficulties, swelling or another serious reaction after consuming wine should seek appropriate medical advice.
Is Low Sulphite Wine Healthier?
Low sulphite wine should not be treated as a health product.
For someone with a medically recognised sensitivity, reducing exposure may be relevant. For most wine drinkers, however, the primary health consideration in any bottle remains the alcohol itself.
A lower sulphite level does not reduce the alcohol content, prevent a hangover or make excessive consumption safe.
Low sulphite is better understood as a winemaking choice. The most compelling reasons to explore these wines are flavour, curiosity, craftsmanship and an interest in how the producer works.
Can Low Sulphite Wine Age Well?
Yes, although the answer depends on the individual wine.
Sulphur dioxide is an important preservative, so bottles made with very little protection can be more vulnerable to heat, oxygen and unsuitable storage. Some are deliberately made for immediate, youthful drinking.
Other low sulphite wines age extremely well because they possess naturally protective acidity, tannin, alcohol, concentration and balance.
Folgorosa Cabernet Sauvignon 2015 is an excellent example. Despite containing only 20 mg/L of total sulphites, it has developed into a mature and structured red with dark fruit, spice and integrated tannins.
How Should You Store Low Sulphite Wine?
Low sulphite wines deserve the same careful storage as any quality bottle, although avoiding heat and rapid temperature changes may be particularly important:
- store bottles in a cool and dark place;
- avoid direct sunlight, radiators and warm kitchens;
- keep cork-sealed bottles horizontal during longer storage;
- serve delicate white and sparkling wines appropriately chilled;
- reseal opened bottles and keep them in the refrigerator.
Some low-intervention wines become more expressive after being open for several hours. Others are more fragile and best consumed promptly.

Why Are More People Choosing Low Sulphite Wines?
Part of the appeal is philosophical. Drinkers increasingly want wines that feel connected to farming, place and the decisions of an individual producer.
Part of it is stylistic. Many low sulphite wines offer bright fruit, freshness and an energetic, unforced character.
There is also a growing desire for transparency. Customers want to know not only where a wine was produced, but how it was fermented, protected and prepared for bottling.
None of this means that sulphur dioxide is inherently bad, or that conventional wine is automatically inferior.
Skilled winemaking is about using the right tools in the right quantities. For one wine, the best decision may be to add no sulphur at all. For another, a small addition may preserve exactly the character the producer has worked to create.
Low Sulphite Wine: The Final Verdict
Low sulphite wine is not one flavour, one certification or one fixed production method.
It can be a sparkling wine made entirely without added sulphur, an organic white protected with a small dose at bottling or a mature red with total SO₂ levels dramatically below the maximum allowed for its category.
The most important distinction is between no added sulphites and low total sulphites.
The first tells us whether the winemaker deliberately added sulphur. The second tells us how much sulphur dioxide is present in the finished bottle.
At Hay Wines, we use the current Soil Association limits for comparable organic wines as our benchmark. A wine must fall below the relevant limit before we classify it as low sulphite on our website.
Rather than treating sulphites as something to fear, it is more useful to understand why they are used and appreciate the skill required to reduce them successfully.
When healthy grapes, careful farming and precise cellar work come together, low-sulphite winemaking can produce wines of remarkable clarity, freshness and character.
So there is no need to treat sulphur as the villain of the story. As with oak, extraction and enthusiastic use of the word “terroir”, the question is really how much, when and why.
