This dynamic family business is a specialist in the wines of Pouilly Fuissé and Saint-Véran from the Macon region of southern Burgundy, where the chalk and limestone hills give way to the volcanic slopes of Beaujolais to the north of Lyon.
Jean-Pierre and Michel Auvigue are third generation proprietors at their winery located in a converted mill, the Moulin du Pont. The family have been working the vineyards for many years, closely following the traditional methods of Burgundian viticulture. Whilst their production is small, the quality is of the highest level, indeed amongst the top three or four of all producers of Pouilly Fuissé.
Vinification
Manual harvesting and pressing in whole bunches. After static must settling, juices are transferred into traditional French oak barrels for alcoholic and malolactic fermentation. The wine is then aged on fine lees for 10 months. Stirring interval is adapted to the vintage’s characteristics. Light filtration and fining, if necessary, prior to bottling.
