Description

Direct pressing. The alcoholic fermentation occurs naturally with indigenous yeasts. Vinified and kept in stainless steel tank for a year, before being aged in 228L barrels for 3 to 6 years. Wine is racked and the lees are removed and filtered, in order to stabilize the wine. This process is key, so there is no microorganism development later on. 3g/hl of sulphites is added once the malolactic fermentation is complete.

Producer

Domaine des Ronces was created by Georges Mazier in 1950, located in Orbagna, a small town in the south of the Jura department. Michel Mazier took over the property in 1986 and extended it up to 6 hectares. The organic conversion started in 2010, and the biodynamic preps (500, 501, nettle and horsetail infusions) have been used since 2014. Kevin, the 3rd generation, joined the team in 2016, the same year the domain got the Demeter certification.

There are 3 main terroirs:
Clay-limestone with East/West exposure and marl-based soil with South/North exposure for the white grapes; clay-limestone with South/North exposure for the red grapes.
