On the nose, you notice mint, chocolate and species such as laurel, characteristic of this terroir. In the mouth it is a concentrated and soft wine, with silky and persistent tannins that frame the potential of this variety in Pirque. Ideal to accompany red meat and game in slow cooking.
Climate
Mainly product with Cabernet Sauvignon grapes, with a small part of Carménère, from the vineyards of Haras de Pirque in the Maipo Valley, to tell this characteristic territory through a fascinating wine, characterized by herbaceous and spicy notes sustained by an extraordinary freshness, typical of the terroir.
The 2018 harvest in Pirque was considered a great season. It was of cool temperatures, which allows to intensify aromas and flavors. The harvest of Cabernet Sauvignon was carried out in several stages, the vineyards located in the upper part at the beginning of April and those of the piedmont at the end of the same month. The Carménere, as usual in this area, was harvested in mid-May.
Winemaking
The different plots of Cabernet Sauvignon and Carménère were vinified independently in stainless steel and French oak vats. It precedes alcoholic fermentation, a cold maceration for 3 to 5 days, to maximize its aromatic potential. After alcoholic fermentation with native yeasts, the wine was transferred to barrels where it matured for a period of 12 months.

A unique horseshoe-shaped design of the winery symbolizes the passion for fine blood horses. Due to their location at the foot of the hill, the fermentation ships have a marked unevenness that allows the grapes and musts to be processed by gravity, reducing the use of motor pumps and other equipment. This technique substantially prevents the risk of oxidation, milder tannins and the protection of the aromas and flavors of the wine.
