More Information

Piolo & Max Vermut del Porto Vecchio

Piolo & Max Vermut del Porto Vecchio is an artisan Italian red vermouth produced in Trieste, in the north-eastern region of Friuli-Venezia Giulia. Rich, aromatic and beautifully bittersweet, it is a characterful aperitif that celebrates the city’s historic connection with the production and international trade of aromatised wines.

Made exclusively from carefully selected Italian wines, this traditional vermouth offers a harmonious balance of vinous richness, fragrant botanicals, gentle bitterness and warming spice. Enjoy it simply over ice with a slice of orange or lemon, or use it to add depth and complexity to classic cocktails such as the Negroni, Americano and Manhattan.

A Red Vermouth Inspired by Trieste

Vermut del Porto Vecchio was created as a tribute to Trieste’s historic Old Port, or Porto Vecchio. For decades, this important maritime district was home to renowned wine cellars from which vermouth and other aromatised wines were shipped around the world.

The recipe also honours the skilled cellar masters and oenologists who preserved Trieste’s vermouth-making traditions and passed their knowledge, passion and expertise to later generations. The result is a distinctive Italian vermouth that combines the elegance of wine with the aromatic complexity expected from a carefully crafted botanical aperitif.

Tasting Profile

Deep and inviting in character, Vermut del Porto Vecchio combines ripe fruit, aromatic herbs, citrus peel and warming spice with a pleasantly bitter finish. Its rounded texture and balanced sweetness make it approachable enough to drink on its own while retaining the intensity required for premium cocktail making.

Expect a generous, complex style with enough freshness and herbal bitterness to keep the palate lively and refreshed.

How to Serve Vermut del Porto Vecchio

Serve well chilled or poured over plenty of ice, garnished with a fresh slice of orange or lemon. It makes an excellent pre-dinner drink and pairs naturally with olives, salted nuts, charcuterie, mature cheeses and traditional Italian aperitivo snacks.

For cocktails, use it wherever a high-quality red or sweet vermouth is required:

  • Negroni: combine with gin and bitter aperitivo;

  • Americano: mix with bitter aperitivo and top with soda water;

  • Manhattan: pair with rye whiskey or bourbon and aromatic bitters;

  • Vermouth and Soda: serve over ice with soda and an orange garnish.

Once opened, store the bottle in the refrigerator to help preserve its freshness and aromatic character.

About Piolo & Max

Piolo & Max is a small artisan liqueur producer based in the heart of Trieste. Founded in the early 2000s, the business was created by two passionate producers determined to revive and reinterpret the city’s historic tradition of handcrafted spirits, vermouths and herbal liqueurs.

Working from their small “workshop of spirits”, Piolo & Max place particular importance on the quality of their ingredients. Their products are made using carefully selected natural raw materials, choosing organic ingredients whenever possible.

Their range combines classic Triestine influences with imaginative modern creations, but the Vermut del Porto Vecchio remains one of the clearest expressions of their local identity. It reflects Trieste’s unique position between Italian, Central European and Adriatic cultures, as well as the city’s long-established role as an international trading port.

An Artisan Italian Vermouth with a Sense of Place

Piolo & Max Vermut del Porto Vecchio is more than simply a cocktail ingredient. It is an authentic artisan vermouth rooted in the history and culture of Trieste.

Whether served as a traditional Italian aperitif, enjoyed slowly over ice or mixed into a classic Negroni, it offers a distinctive alternative to mass-produced commercial vermouths. An excellent choice for vermouth enthusiasts, adventurous drinkers and anyone looking to upgrade their home cocktail cabinet.
