Tasting Note
A traditional method sparkling wine, this uses the same grape varieties as Champagne - Chardonnay, Pinot Noir and Pinot Meunier - grown on clay and chalk soils near the town of Charcenne. It is made in exactly the same way as Champagne and has an average of two years ageing in the bottle on the lees, which is more than certain expensive non-vintage wines from Champagne. As there is no designation for Cremant within Franche-Comte, this is not officially labelled as one, but fits the bill perfectly. This is an exceptionally good value wine with true richness and depth of flavour, fine bubbles and a long finish.
Producer
Located in one of the least known wine-growing areas of France, sandwiched between Burgundy, Alsace and Jura, the Guillaume vineyard has been in continuous cultivation since 1732.
During the phylloxera crisis the Guillaume family quickly adapted to become one of the leading nurseries grafting vine on to phylloxera-resistant rootstock. Xavier Guillaume, winemaker, has taken this wealth of knowledge to harness the natural richness of this fine terroir that once served the Archbishop of nearby Besançon.
The 40 hectares, including a superbly sited single vineyard employed in the Collection wines, echo the limestone-marl slopes of neighbouring Burgundy. Alongside the pinot noir and chardonnay, he makes two delicious wines using the savagnin grape: Païen is vinified normally, Cuvée des Archevêques is made under flor, like vin jaune.
Thanks to Xavier’s vision and unrelenting determination he is one of France’s most awarded winemakers, with numerous “Coup de Coeur” awards from Hachette, references in Gault-Millau and trophies from the Chardonnay du Monde competitions.
