Sulphur dioxide, usually shown as SO₂, is naturally produced during fermentation and is also commonly added during winemaking to protect wine from oxidation and spoilage. Some winemakers choose to work with much lower levels, relying instead on healthy grapes, careful handling, rigorous cellar hygiene and minimal-intervention winemaking.
What is low sulphite wine?
There is no single legal definition of “low sulphite wine”. At Hay Wines, our collection includes wines made with no added sulphites, alongside wines whose total SO₂ levels are strictly below the Soil Association limits for the equivalent category of organic wine.
Even wines described as “sulphite-free” may contain small amounts of naturally occurring sulphites created during fermentation. For this reason, “no added sulphites” is usually the more accurate term.
Discover wines made with minimal intervention
Our range includes fresh and vibrant low sulphite red wines, characterful whites, naturally made sparkling wines, pét-nats and textured orange wines. Many are also organic, biodynamic or natural wines, although these terms do not automatically mean that a wine contains no added sulphites.
Low-sulphite winemaking is not a guarantee of a particular flavour. The wines can range from bright, clean and fruit-driven to savoury, complex and more adventurous in style. What connects them is a thoughtful approach in the vineyard and cellar, with producers using sulphur sparingly or avoiding additions altogether.
